Vitamin K2 is also called menaquinone, K stands for Koagulation. Vitamin K2 powder is insoluble in water, soluble in organic solvents and vegetable oil. Its CAS number is 11032-49-8 and the molecular formula is C31H40O2.
Vitamin K2 has several different subtypes, the most important ones are short-chain MK-4 and long-chain MK-7. M stands for menaquinone, the K stands for vitamin K, the number represents the number of isoprenoid side chain residues.
Vitamin K2 is mainly used in supplements, and it can be also used as fortifying agent in food to increase the nutritional value.
